We are looking for an employee living in the Balearic or Canary Islands for project work for 2 – 3 months.
Our company is a well-known site – an aggregator of small local rentals in resorts. We are looking for a person who will help us with the search and involvement in cooperation with such rentals.
MANDATORY REQUIREMENTS
– lives on the islands,
– fluent in Spanish (this will be required to communicate with the rentals),
– fluent in Russian or English (this will be required to communicate with colleagues in the company),
– has experience in tourism or sales,
– Have a personal laptop.
WHAT YOU HAVE TO DO
– cold calls and correspondence with potential partners (rentals),
– personal meetings with rental managers and negotiation,
– presentation of conditions and principles of cooperation,
– transaction support at all stages: cold contact, presentation, contract signing, rental registration on the site, collection of complete information about the rental, cars and prices, publication on the site, receiving the first orders.
– work in the CRM system and maintain simple reporting on the work.
CONDITIONS
– Payment by piecework, for each successful contract – 200 euros.
– Compensation for travel expenses and mobile communications.
– The project period is January – April 2022.
– During this time, you need to contract from 10 to 40 rentals. You can do more, but not less.
– At the beginning of work, you will have to complete a training course for 1 – 2 weeks.

How the New Year is celebrated in the Italian Alps
In any Western country, Russians first celebrate the New Year according to Russian time and then, already pretty tipsy, celebrate the New Year according to the time of the host country. The time difference is quite enough to celebrate the Russian New Year, drink, eat, watch a little New Year’s light and celebrate the New Year again according to local time. We celebrated the New Year in the same way, being in the Italian Alps, or rather in Tyrol, more precisely in the city of Ortisei in the Val Gardena region.

On Saturday, January 27, I opened my LiveJournal page and couldn’t believe my eyes. Acquired SK, labor and constant investment in promo, suddenly collapsed. At first, I decided that these were some kind of glitches, because I read that one blogger a day earlier also had a collapse of the UK and rating down a couple of dozen places, but the next day his rating and UK recovered. Apparently, in his case there was a glitch.

Who drinks more in the Alps – Russians, Germans or Italians, skiers or snowboarders
In the Italian Alps, a glass of champagne, wine or Veneziano with oysters or grilled shrimp in a ski bar is almost a tradition. Of course, drinking on the mountain while skiing or snowboarding is fraught. However, everyone drinks on the mountain! Okay, almost everything. Some people have flasks of their favorite drink with them, some hang out in bars, but even teetotalers drink at least mulled wine or grog. It’s cold all day in the snow!

Maspalomas station hosts a 15-metre antenna with reception in S- and X-Band and transmission in S-band. It is located on the campus of the Instituto Nacional de Tecnica Aerospacial (INTA), in the southern part of the Canary Islands’ Gran Canaria, at Montaña Blanca. The station provides routine support for ESA’s Cluster mission and back-up and LEOP (Launch and Early Orbit Phase) support to other missions.
Location
The coordinates of the 15-m antenna are +27° 45′ 46.40″, -15° 38′ 01.68″. The antenna is sited at 205.1 metres altitude with respect to the WGS-84 reference ellipsoid, a mathematically-defined reference surface that approximates the Earth’s geoid surface.
Facilities & technology
In addition to the 15-m antenna, Maspalomas provides facilities for tacking, telemetry, telecommand and radiometric measurements (ranging, Doppler, meteo).
Maspalomas station
The station has a frequency and timing system, a monitoring and control system and communications are enabled via the ESA Operations Network (OPSNET). The site is equipped with a no-break power plant.
It is planned to upgrade the terminal for X-band transmit and receive capability in the future.
Operations
The station supports missions for ESA via ESOC, as well as missions for EUMETSAT (European Organisation for the Exploitation of Meteorological Satellites), JAXA (Japanese Aerospace Exploration Agency) and COSPAS-SARSAT (International Satellite System For Search and Rescue).
It routinely supports ESA’s four-satellite Cluster mission, and in 2006 also provided support to Kompsat-2 and MetOp-2. It was also used during ESA’s highly successful SMART-1 Moon mission and for Japan’s ETS-7 rendezvous mission.

The station was originally built for NASA’s Mercury program, and from 1960–1975 the station supported Mercury, Gemini, Apollo, Apollo-Soyuz and Skylab. The station is operated by INTA (Instituto Nacional de Tecnica Aerospacial) in cooperation with Ingenieria y Servicios Aerospatiales for ESA.
GPS-TDAF
A GPS-TDAF (GPS Tracking and Data Analysis Facility) dual-frequency receiver system with geodetic accuracy is installed on the site, which delivers continuous measurements to the ESOC Navigation Facility.

Maspalomas station is in the municipal district of San Bartolomé de Tirajana. The site is about 1.6 kms from the main road which goes from Las Palmas city to Mogán and 1750 metres from the coast.
The station is approximately 38 kms from Gran Canaria International Airport and 60 kms from the city of Las Palmas de Gran Canaria. Transport between the airport and the station is by rental car or taxi. Take the motorway south from the airport and stay on it to the end. The station is signposted (INTA Estacion Espacial de Maspalomas) to the right, 1.7 kilometres after the end of the motorway – and is then 1. 6 kilometres further.

La calima es un fenómeno meteorológico que se produce en la atmósfera y caracterizado por la presencia de partículas sólidas muy pequeñas en suspensión pero lo suficientemente numerosas para dar al aire un aspecto opaco. Como resultado se tiene un ambiente turbio y la contribución a la coloración amarillenta o anaranjada del crepúsculo.
Estas partículas suelen ser de polvo y arena, aunque también pueden estar formadas de cenizas y arcilla. El tamaño de éstas oscila entre unidades inferiores a las micras y decenas de micras.
La inhalación prolongada de estas sustancias resulta perjudicial para la salud.
¿Cómo se forma? Tipos de calima
En función del origen de las partículas, existen dos tipos de calima:
Calima tipo “A”. Se conoce como la calima “natural”. Se forma a partir del transporte de arena, sales del agua (sodio) u otros elementos presentes el ambiente. Cuando su origen es principalmente arena del desierto se suele hablar de “polvo en suspensión”.
Calima tipo “B”. Son los llamados eventos especiales. Su origen reside en la contaminación o en los incendios forestales. La respiración de estas partículas es especialmente peligrosa para la salud.
En nuestro país, un ejemplo típico de calima tipo “A” es el que se da con frecuencia en las Islas Canarias (especialmente en Lanzarote y Fuerteventura) cuando los vientos de componente este arrastran polvo del desierto del Sáhara hasta el archipiélago, provocando una reducción considerable de la visibilidad. Este fenómeno es más habitual durante los meses de invierno. Estos eventos de polvo en suspensión procedente del norte de África pueden afectar también a la Península Ibérica, aunque en menor frecuencia e intensidad.
Un ejemplo de calima tipo “B” es el que se da en grandes ciudades como Madrid en invierno y bajo condiciones de gran estabilidad atmosférica. La ausencia de viento y precipitaciones junto a la inversión térmica propician un estancamiento de los contaminantes (procedentes del tráfico o de las calefacciones) sobre las ciudades de forma que se reduce la visibilidad y, especialmente, la calidad del aire.

¿Cómo diferenciar la calima de otros fenómenos?
Al igual que la calima, la bruma y la niebla también provocan una reducción de la visibilidad. Sin embargo, la principal diferencia entre ellas reside en la humedad. Mientras que las otras dos tienen lugar por condensación de partículas de agua en el ambiente (aire húmedo), la calima está formada por partículas sólidas (aire seco).
Además, tanto la bruma como la niebla carecen de efectos negativos sobre la salud.
Calima y precipitación
Cuando se producen precipitaciones en un ambiente calimoso tiene lugar lo que se conoce como “lluvia de barro”, en la que las partículas de polvo en suspensión son arrastradas por las gotas de agua (o los copos de nieve) y depositadas sobre el suelo y los objetos en superficie. En algunos lugares puede denominarse también “lluvia de sangre”. Este fenómeno es relativamente habitual en la costa mediterránea española.
En el caso de que coincidan precipitación y calima tipo “B” puede producirse lluvia ácida, resultando perjudicial para el medio ambiente.

¿Cuándo desaparece?
Normalmente los episodios de calima, al menos en España, suelen durar apenas unos días. La calima se retira al producirse un cambio de masas de aire, propiciado por viento y/o lluvia que ayudan a dispersar las partículas en suspensión.
Efectos en la calidad del aire
La calima suele empeorar los índices de calidad del aire a su paso, especialmente el índice PM10 (partículas dispersas en la atmósfera con diámetro inferior a 10 µm). En España, el valor límite diario de PM10 se establece en 50 µg/m3, no debiéndose superar en más de 35 ocasiones por año civil.
Para hacerse una idea de su impacto, durante el episodio calimoso de febrero de 2020 en Canarias se llegaron a alcanzar en Gran Canaria casi los 2000 µg/m3, superándose en 40 veces el valor máximo recomendado.
También hay que tener en cuenta que la calima, en ocasiones, puede contener partículas nocivas que el viento arrastra a su paso por zonas donde se liberan sustancias contaminantes.
¿Cómo afecta a la salud?
Los efectos de la calima tienen dos componentes: uno directo y otro indirecto.
Se debe tener en cuenta que las partículas PM10 entran a nuestro organismo a través de las vías respiratorias alcanzando directamente al pulmón y, en consecuencia, al riego sanguíneo.
Como efecto directo sobre la salud, los principales síntomas que pueden aparecer están relacionados con problemas respiratorios e irritación de las mucosas: obstrucción nasal, picor en los ojos y continua tos. Si la calima es persistente y su densidad abundante, pueden aparecer incluso broncoespasmos (dificultades serias para respirar), dolor torácico y asma, en mayor medida en personas con alergias u otras patologías respiratorias. Además, pueden desencadenarse crisis de ansiedad.

Por otro lado, el componente indirecto es la reducción de la visibilidad, en mayor o menor medida (en función de su densidad). Esto no afecta directamente a la salud, pero sí puede provocar accidentes de tráfico y otros problemas derivados de la visión reducida.
Recomendaciones a seguir
Para mitigar sus consecuencias, es importante seguir las predicciones meteorológicas e informar de forma rápida y con la suficiente antelación a la población de riesgo y susceptible a sufrir sus efectos.
Algunos de los consejos que debemos seguir son mantener las ventanas cerradas, usar mascarillas si tenemos que salir al exterior, evitar el ejercicio al aire libre e ingerir abundantes líquidos, en especial niños y ancianos, para evitar la deshidratación.

Did you know that North Africa accounts for approximately 55% of global dust emissions? And due to their proximity to the Saharan coast, the Canary Islands sometimes suffer from a phenomenon which is known locally as La Calima, when a layer of Saharan dust covers the islands, affecting air quality and visibility.

In the Canary Islands, two observation sites have carried out dust measurements: Izaña (Tenerife) since 1987 and Pico de la Gorra (Gran Canaria) since 1996.
What is a calima?
The phenomenon known as a calima is what the locals call when a layer of dust from the Sahara comes and covers the islands, making it hard to see or breathe, affecting people with cardiovascular problems or respiratory problems.
How does the Saharan Dust get to the Canary Islands?
The Canary Islands are just one of the first areas affected by the layer of Saharan dust, which travels much further, reaching areas of the Caribbean, Central America and South America, especially in the summer months.
According to scientists, there are large seasonal and spatial variations in mineral dust concentration over the Atlantic Ocean, greatly affected by the seasonal latitudinal shift of the Intertropical Convergence Zone (ITCZ).
During the summer, the ITCZ shifts northwards over the northwestern part of the African continent, creating a thermal low over the surface of the African continent. This causes the North African high ‐ pressure system to be located at a higher altitude and consequently, dust transport occurs high in the atmosphere within the so-called Saharan Air Layer (SAL).
The connection between the trade winds and the calima in the Canary Islands
Dust transport is controlled by the African easterly jet and occurs between a height of 3 km and 6 km when the dust layer is lifted above the Trade Wind Inversion layer.
In the Canary Islands, the location of the Trade Wind Inversion layer is greatly influenced by seasonal patterns, occurring in summer between 770 m asl and 1380 m asl with an average thickness of about 560 m, while in winter the layer is found at higher altitude (1360 m asl to 1850 m asl) and with a reduced average thickness of about 360 m.
When is calima more frequent in the Canary Islands?
Although the calima is more frequent during the winter months, it can also happen during the summer season.
The highest mineral dust concentrations are registered during winter and early spring in the Canary Islands and during the late autumn and winter in Cape Verde.
According to regional dust models (e.g. Schepanski et al., 2009), the Sahara produces a larger amount of dust during summer, but the dust is transported at higher altitudes of up to 10 km within the Saharan Air Layer.
In winter the dust is transported along with the northeast trade winds at far lower altitudes.
What happens during a calima episode in the Canary Islands?

The Saharan dust storms usually bring with them very low visibility and the entire landscape seems immersed into a haze and there is dust everywhere (you can observe the amount of dust on everything that is left outside, from cars to outdoor furniture).
According to specialists, the haze does not only bring dust but is also accompanied by a high concentration of toxins from thermal power plants, petrochemicals and mining plants in neighboring countries to the Saharan desert such as Algeria and Morocco.
These toxins exacerbate health problems for people who breathe this air, especially those suffering from some respiratory or cardiological pathologies. These particles enter the airways, reach the bronchi and can cause inflammatory processes.
When there’s a calima in the Canary Islands, there’s usually a big shift in temperature, and most of the time the temperature skyrockets at unusual levels, making it even harder to breathe.
There are some visitors who are happy with this increase in temperatures, especially if it’s happening during the winter months but keep in mind that the air quality drops during that time, so you should not spend that much time outside.
What should you do during a sandstorm in the Canary Islands?
How can you protect yourself from breathing the harmful dust if this happens while you’re visiting the Canary Islands?
The authorities usually advise the population to stay inside as much as possible, especially if it’s a severe episode, like the one back in February 2020 and this recommendation is especially valid for people who suffer from respiratory problems like asthma.
You should also avoid exercising while you’re outside so that you can avoid breathing in even more dust.
Does the calima affect all the Canary Islands?

In general yes, all the islands in the archipelago are susceptible to the calima episodes.
So there can be a calima in Tenerife, as well as a calima in Gran Canaria or Fuerteventura and Lanzarote, plus the rest of the smaller islands. Depending on the episode and the direction of the winds, one part of the archipelago can be more affected than the other. Sometimes it happens that the calima is more severe in Lanzarote and Fuerteventura, and other times it happens to be more severe in Tenerife or Gran Canaria.
For example in February 2020, which is considered one of the most severe episodes of Saharan dust reaching the Canary Islands, the airport in Gran Canaria had to be closed for several hours because the visibility was so low that no plane could land or take off safely.
Calima in Tenerife
The image above with Mt. Teide is from back in February 2019, during a calima episode in Tenerife. We went up to the mountains, hoping that it might be better than down by the coast, but even Teide seems engulfed by the Sahara dust and the visibility was very low compared to a normal day. Keep in mind that this is a giant volcano visible from many places on the island, so it was very unusual to see it covered like that in a haze.
How long does a calima episode last?
Calima usually lasts for a few days, usually 2-3 days, sometimes more. After that, the sky usually starts to clear up and the visibility improves gradually.

Great place with an incredible view and absolutely wonderful staff! There was a bonfire at night to get to know the other guests and a lovely breakfast in the morning. We didn’t get to do much of the nature trails because of the weather, but from what we saw, there are some great views of the lake. The tents they provide are small, so if you’re tall, you may want to bring your own. It’s about 10mil in tuktuk to arrive there, but it’s nice to be outside of the city and enjoy the nature! highly recommended 🙂

From the seven Canary Islands, Tenerife is the most visited from tourists and is one of the most important tourist destinations in Spain. The awesome thing about Tenerife is that the temperatures are almost the same during the whole year. This means that you can go on a beach vacation there no matter what month it is. Here are some tips about what you could do there.
Go on an organized day-trip. You can find information about that kind of trips in any tourist office or ask at the reception of the hotel that you are staying in. It’s a perfect way to see the main tourist attractions of the island and learn some more information about it.
Go on whale and dolphin watching boat-trip. Tenerife is one of the top destinations in the world for whale watching. That’s why there are a lot of trips to choose from. Whale-watching boats depart from most of the main southern resorts. To see those wild creatures swimming free in the ocean is a unique experience. Prices for those trips vary quite a lot depending on the package they offer. Most of the trips last around 2-4 hours and usually include a stop at a picturesque place for a refreshing swim. You could either book your trip online or wander around harbors which offer trips where you choose which boat and trip you like the best and you might even be able to negotiate a better price.
Go to a waterpark. Tenerife offers some of the best waterparks in Europe and in the world. Each of them has its own uniqueness. Siam Park Tenerife (elected the best waterpark in the world by Tripadvisor in 2014 and 2015) has a lot of pools, fantastic slides, a huge pool with artificial waves, restaurants and cafes. It is a perfect choice for families or for young people looking for adrenaline. One of the biggest attractions is the slide that goes through a huge aquarium full of sharks and rays. Prices are around €35 for adults and €23 for children. In Aqualand Costa Adeje you can find waterfalls, water slides for different ages, terraces for sun bathing and amusement spots for younger kids. The main attraction is the Dolphin Show. The prices are around 24 Euro und 16 for children (5-10 year old). But if you want to go to a more low-profile park, quieter, to relax by the pool, Lago Martianez and Parque Maritimo are good choices where you can relax on the sunbeds around the pools and the prices are around 3-6 Euro. You can get to the waterparks with a transfer from the hotel or with the public transport.
Go to the carnival in February/March. The Carnival of Santa Cruz de Tenerife is held each year in February or March in Santa Cruz de Tenerife and attracts people from all over the world. It is considered the second most popular after the one held in Rio de Janeiro. Dazzling costumes and endless dancing are part of the spectacle. As much fun as the parades and street entertainments are to watch it’s much more fun to join in, so you should definitely consider going in costume. If you’ve come unprepared and need a costume you’ll always find plenty stands selling masks and wigs. You should get your tickets early, because they can be taken really fast. If you can’t get tickets to any of the competitions head to one of the ‘Mogollones’. These open-air Carnival parties feature live entertainment and Latin and Salsa music. With tens of thousands of people this will be one of the wildest parties you’ve ever attended. The carnival is also celebrated in every town and village throughout Tenerife but the main celebrations are in Santa Cruz de Tenerife and Puerto de la Cruz. Relax at the beach. Tenerife is known as the Island of Eternal Spring. The temperatures are not so different during the summer and the winter. It is always perfect time to go to the beach and sunbathe. You could bring a book or just relax and enjoy the beautiful nature around. Ask at the reception of your hotel or some locals where the nearest sand beaches are and how you can get there.
Go scuba-diving and swimming with turtles. You can explore remains of shipwrecks, glide silently through dazzling curtains of exotic fish and explore underwater caves. The warm Canarian waters are so incredibly clear that the sun illuminates the entire seascape and you can see up to 30 meters in any direction. Ranging from hidden rocky coves to sprawling beaches, there are over 30 major dive sites dispersed along Tenerife’s coast. There are countless scuba-diving clubs and schools, making scuba-diving in Tenerife a fascinating activity for beginners and experts. There even are some organized snorkeling trips, where you can swim with turtles. Five species of sea turtles can be observed in the Canarian waters and there are some areas near the coast where they reside temporarily like El Puertito Tenerife also known as turtle bay Tenerife. While swimming near the turtles be careful not to scare them.
Practice watersports. Tenerife has several Wind Surfing schools for both beginners and experienced sailors. There are surfing and wind surfing havens along the entire Tenerife coastline- so grab your board and hit the waves! There are surfing and wind surfing schools and companies dispersed throughout Tenerife. You could go to learning courses or just rent equipment if you didn’t bring your own.
While in Tenerife you could also go Jet-skiing, hiking, fishing, Horse riding, Paragliding, Kayaking or just visit the zoo. No matter how you decide to spend your time in Tenerife don’t forget to always be present in the moment and to enjoy the nature and the wildlife that surrounds you.

The climate of Tenerife is perfect for summer and winter trips. Go for sunbathing in the summer and a milder temperature in the winter months. Peak season runs from May through to September, but you can get cheap deals in the off season and it still won’t be too cold.
Where to Stay in Tenerife
So Playa de las Americas is the popular tourist part of the island in the South. If you want booze and water sports, it the place to go. But personally, I would recommend staying in the capital of Santa Cruz on the North East coast, or Puerto de la Cruz on the North West. They have excellent hotels, restaurants and coffee shops.
The great thing about Tenerife is that it is a small island which makes anywhere on the island accessible within a day. So wherever you stay on Tenerife, you will be able to visit what you like on the island.
I stayed at the Be Live Oratava Hotel in Puerto de la Cruz, which was clean, comfortable and in a great location. If you want to splash out, go for the 5* Hotel Botanico & The Oriental Spa Garden.
Solo Female Travel in Tenerife
Tenerife has great hotels and WIFI – perfect for digital nomads and solo female travellers. It well geared up for tourism with plenty of guided tours and trips available for decent prices. I felt extremely safe walking around in Tenerife as a female traveller.
How Long to Spend in Tenerife
A week is certainly long enough to see the main sights of Tenerife, but if you want some beach and relaxation time, I’d recommend taking two!

Puerto de la Cruz
Puerto de la Cruz is the place to stay if you are looking to speak some Spanish and soak up culture as well as having access to the beach. The colourful Spanish style houses with painted wooden shutters will make you want to sell up and move to the Old Town – Ranilla.
The historical centre is laden with street art to the extent that it has become an ‘outdoor museum’ entitled ‘The Museum of Ephemeral Art’. The majority of ‘Los Murales’ (Murals) were painted in 2014 to open the outdoor street art museum.
If you love flowers and gardens, don’t miss the fabulous Jardin Botanico Tenerife has to offer in Puerto de la Cruz. The botanical gardens date back to the 18th Century and boast tropical & subtropical plants, including 200-year-old fig tree and massive Bayan tree.
I decided to give Loro Parque a miss, because they keep Whales in captivity, which I don’t agree with, and so I just wasn’t comfortable with the ethics of this place (It’s mentioned on the Netflix documentary ‘Blackfish’).
Santa Cruz
The capital of Tenerife is great for shopping, site seeing and eating out. It has many large chains that you will recognise for clothes shopping including H&M and Zara – the best places to go clothes shopping are Centro Comercial Meridiano and Calle de Castillo.
Plaza de Espana is not only the largest square in Tenerife but also in the whole of the Canary Islands. It was built in 1929 on the historic site of Castillo de San Cristobal (the castle) and around the square you will see the Palacio del Cabildo de Tenerife, Palacio de la Carta and the Plaza de la Candelaria. In the middle of the square is the Monumento a los Caídos – a tribute to those who lost their lives in the Spanish Civil War.
Don’t miss the Iglesia de la Concepción. It’s the only Church in the Canary islands that has 5 naves and is a classic landmark of Santa Cruz de Tenerife.
Santa Cruz is well connected by buses to other cities on the island, but if you are short of time I would recommend booking tours to see more in the time that you have on the island.
San Cristobal de la Laguna
San Cristobal de la Laguna is the second largest city on the island of Tenerife and the historical centre is a UNESCO World Heritage Site. It’s a colonial town full of buildings and Churches that date from 16th – 18th Centuries. It was the first unfortified town that used a grid model and was a forerunner to the settlements in the Americas under Spanish rule during colonial times.
Don’t miss the neo-classical cathedral – La Iglesia del Cristo which is open to the public. Also include on your itinerary Nava palace and Salazar palace, plus and convents of Santa Catalina and of Santa Clara.
Mount Tiede
Mount Teide (3700 metres above sea level) dominates Tenerife’s landscape and is the first thing that you see from the plane when you come into land, offering a spectacular introduction to the volcanic island. You can take amazing photos of Mount Tiede and Tiede National Park from the base of the mountain and explore the surrounding scenery and wildlife.
If you are feeling brave enough, you can take the cable car to near the summit, but get there early if you wish to do that as queues can be long, especially in high season. The cable car will take you to a high altitudes from the lower station at 2,356 metres above sea level to the top station at 3,555 metres in approximately 8 minutes. Remember that the cable car trips are also weather dependent.

Masca Village
The drive to Masca village is an experience in itself – your coach will follow the winding roads to the most beautiful mountain village on the island. Expect there to be arguments between your driver and approaching divers – it seems to be the protocol that whoever shouts the loudest can pass first!
When you arrive in Masca village, you are likely to be greeted by Spanish guitar playing locals. Stop off at the restaurant there and also the Masca gift shop is a lovely place to shop for souvenirs. From Masca village, you can look down towards ‘Pirates cove’ in the sea, where the pirates hips used to dock to grab and swap their loot!
Icod de los Vinos
Most tours of Tenerife will make a stop off at the gardens of ‘Icod de los Vinos’ which is home to the famous ‘El Drago’ or Dragon Tree. It looks like one big massive piece of brocolli, so I call it the ‘Brocoli Tree!’ It’s a symbol of Tenerife and so well worth a visit. While you are there, be sure to sample some of the gorgeous local wines of this region.

And you can wait out this time by going to warmer climes to return to your homeland with a chocolate tan and in a wonderful spring mood. A March vacation is not the cheapest pleasure, but after all, we live once, and why not allow ourselves to fly away from cold Russia to a warm summer?

An unusual spectacle awaits tourists during Shrovetide Week in Olney, England. Women run along the main street of the city, each holding a frying pan with a pancake, periodically tossing it up. According to the legend, the start of the pancake race was started by a housewife who calmly baked pancakes in her kitchen until she heard the church bell ringing. The people of Olney not only failed to call an ambulance for psychiatric help, but made such a run a tradition. The northern part of the island, traditionally known for agricultural, is a lush green carpet that runs from under Mount Teide to the sea in the North. The most important historical places are also located here, among them are: La Laguna, the former capital, now the university center is full of buildings from the XVII century. Icod which is famous for its wine and for the thousand-year-old Drago tree and the fertile Orotava valley are also located in the North.
The southern part of the island presents a landscape, which contrasts surprisingly with the north. The oceanic clouds are trapped by the high mountains in the interior and cannot continue towards the south. For this reason, the southern area is always sunny, and as a result, the arid landscape reveals multi-colored lava and desert-like vegetation. This part of the island is perfect for relaxing on the beach, swimming in the sea, practising water sports, like windsurfing, surfing and diving.
Those who visits Tenerife during the month of February should not miss the Carnival of Santa Cruz, worlds second best after that of Rio de Janeiro. During this period, all inhabitants get their costumes out, the best Salsa groups invade the night and they cover the city with colour and spectacle!
Going Out: Tenerife has a very vibrant nightlife year-round. The nightlife starts around 10 pm. where people go out for dinner. All over the Islands there are small taverns or restaurants where you can find something enjoyable to eat (we can recommend the ‘tapas’ and the local food). After dinner you can continue having a drink in an open-air bar or a salsa pub. And if you still want to party, you can dance until dawn in the many clubs located in the tourist areas (Puerto de la Cruz in the north or Playa de las Americas in the south). Tenerife is the largest of the seven Canary Islands located in the Atlantic Ocean, right off the northern coast of Africa. The sun always shines on this beautiful island, which is one of the reasons why it is one of the most popular tourist destinations throughout the year.
Tenerife is a volcanic island by origin, it was created over a period of time as a result of several eruptions, the last of which occurred at the beginning of the 20th century. This island offers a wonderful combination of mountainous terrain, spectacular landscapes and a subtropical climate with an average temperature of 20-22°C during the winter months and 26-28°C during the summer months.
In March 1936, the Republican government dispatched Francisco Franco to the island, suspicious of his growing influence and power. As I just stayed there for 1 day I found amazing the fact of having some basics as olive oil, salt, pepper, coffee, a bottle of water etc. Super easy check-in and check-out and a very friendly owner.

The September 2022 average Arctic sea ice extent was 4.87 million square kilometers (1.88 million square miles), tying with 2010 for eleventh lowest in the satellite record (Figure 1a). Extent was 1.54 million square kilometers (595,000 square miles) below the 1981 to 2010 average and 1.30 million square kilometers (502,000 square miles) above the record minimum set in 2012. The annual minimum extent was reached on September 18 and the autumn freeze-up is now well underway.
Ice extent declined at a faster than average rate from the beginning of the month until the minimum was reached on September 18 (Figure 1b). This resulted in a tie for the tenth lowest minimum daily extent in the satellite record. Extent was below average in all sectors of the Arctic Ocean, apart from the northern shore of the Canadian Arctic Archipelago, where ice is almost invariably pushed up against the coast by winds and ocean currents. A tongue of ice continued to extend southward in the East Siberian Sea, and a portion of ice floes broke away from the main pack ice off the tip of that tongue. An open water passage has nevertheless persisted along the Northern Sea Route. The Northwest Passage has started to freeze up, particularly the northern route through Parry Channel, but much of the Canadian Archipelago remained essentially ice free through the end of the month.

Air temperatures during September at the 925 millibar level (approximately 2,500 feet above the surface) were above average over the North American side of the Arctic and near average or below average over most of the Eurasian side (Figure 2a). Averaged sea level pressure for September featured low pressure extending across Eurasia, Alaska, and the Canadian Arctic Archipelago, with high pressure over the central Arctic Ocean, notably north of the Canadian Arctic Archipelago (Figure 2b). The low pressure over Alaska reflects the passage of an extremely strong storm during the middle of the month that caused extensive damage and flooding to the town of Nome and surrounding areas.

The downward linear trend in September sea ice extent over the 44-year satellite record is 79,100 square kilometers (30,500 square miles) per year, or 12. 3 percent per decade relative to the 1981 to 2010 average. Based on the linear trend, since 1979, September has lost 3.59 million square kilometers (1.39 million square miles). This is equivalent to about twice the size of Alaska.

The summer 2022 melt season had some noteworthy highlights. Extent loss was less extreme than recent years through much of the summer; for the first time since 2014, extent briefly sat within the 1981 to 2010 lower interdecile range. However, late season ice loss was strong, pushing the September average to eleventh lowest in the passive microwave satellite record. No region of the Arctic was extreme in terms of how far north the ice edge retreated, though compared to average conditions, the ice edge was quite far north in the Laptev and Chukchi Seas. Surface melt onset was also variable, with earlier-than-average melt along the Siberian coast, particularly in the Kara and Barents Seas, but later-than-average melt in much of the central Arctic Ocean.
Air temperatures at the 925 millibar level (about 2,500 feet above sea level) were above average over much of the Arctic Ocean, but not as extreme as in many recent summers. Much of the Arctic Ocean experienced summer (June, July, August) temperatures 1 to 3 degrees Celsius (2 to 5 degrees Fahrenheit) above average (Figure 4a). Only in parts of the Barents Sea did 2022 summer air temperatures reach up to 4 degrees Celsius (7 degrees Fahrenheit) above average. In the southern Chukchi and northern Bering Seas, temperatures were 1 degree Celsius (2 degrees Fahrenheit) below average.
During June through August, average sea level pressure was low over much of the Siberian side of the Arctic, as well as over eastern Canada, and east of Greenland, with a small and weak Beaufort Sea High that primarily manifested itself in June (Figure 4b). Summer-averaged pressure gradients were slack, particularly in July and August, albeit with intermittent stronger gradients caused by passing weather systems. Weak pressure gradients resulted in relatively weak surface winds and sea ice circulation through much of the summer.
Of particular note was the formation of polynyas north of the Kara Sea, at about 87 degrees North latitude. These started to form in early July and were observed intermittently through the end of August. These unusual polynyas likely opened at least in part because of divergent ice motion, but their formation and general persistence is also an indication of thin, young, and uncompacted ice. It is also possible that deep ocean waters were churned toward the surface as currents flowed over the Lomonosov Ridge beneath some of the polynya areas.
The distribution of sea ice age at the end of summer 2022 shows a dominance of first and second-year ice (Figure 4c). Some of this second-year ice extends south into the East Siberian Sea and is one reason why the Northern Sea Route maintained ice until later in the summer. A thin ribbon of old ice (3 to 4 and 4+ years age) extends along the northern shore of the Canadian Arctic Archipelago. The summertime loss of the multiyear ice has generally increased since the mid 1980s, but with large variations from one summer to the next (Figure 4d). The 4+ year-old ice shows less summertime change, especially since 2012, because so little of that ice remains in the Arctic. The most notable feature in both ice age classes is the large spike in loss during the 2007 summer.
The evolution of sea ice concentration during the 2022 melt season is presented in an animation, which begins on May 2 and ends at the sea ice minimum on September 18 (Figure 4f). Rapid early loss is noticeable in the Kara Sea with large retreats also occurring in the Laptev and Beaufort Seas. By August, a tongue of somewhat older and thicker ice is left behind in the East Siberian Sea. Retreat was generally ahead of the average date for ice extent through the summer. Also shown is the unusually persistent low sea ice concentration in the high Arctic north of the Severnaya Zemlaya islands, eventually leading to the opening of two high-latitude polynyas in late August into early September. Melt events are shown as brief drops in concentration, but the regions around the polynyas remained low throughout the second half of the summer.
The Northwest Passage (NWP)—a shortcut between Europe and Asia through the channels of the Canadian Arctic Archipelago—was the dream of explorers and financiers for centuries. The southern NWP route was first navigated by Roald Amundsen over three summers, 1905 to 1908. In recent years, his circuitous route, winding through narrow and shallow channels, has often opened for at least part of the summer. However, even in recent years, the more direct northern route through Parry Channel, with wide and deep channels more suitable for shipping, has remained choked with ice. This is partly because of an influx of thick, multiyear ice into the channel from the Arctic Ocean to the north. This year the northern route largely opened. While operational analysis showed the region with 10 to 80 percent ice cover, high resolution maps of the ice cover, indicated a continuous path through open water starting in late August until mid-September. Overall, the ice area in the northern route reached the fourth lowest in the 55-year record of Canadian Arctic sea ice conditions analyzed by the Canadian Ice Service; the NWP information was provided by Steve Howell of Environment and Climate Change Canada (Figure 4e).

As the Arctic makes its journey into autumn, Antarctic sea ice extent is nearing its winter maximum. On September 16, extent stood at 18.19 million square kilometers (7.02 million square miles), which may represent the seasonal maximum. However, extent may yet rise above that value. After record and near-record low extent earlier in the year, late ice growth increased the extent within the inter-decile range by mid-September.
Antarctic sea ice extent has exhibited extreme interannual variability with record highs and record lows within the past decade. There is also strong regional variability, with some areas showing long-term trends of ice loss, with others showing gains. One region with a notable downward trend in extent is the Bellingshausen Sea, west of the Antarctic Peninsula. The Peninsula region has also experienced a strong multi-decade warming trend, which has resumed after a decade-long hiatus. One factor in these changes is a strengthening of the Amundsen Low the brings southward winds to the region, which raise air temperatures and compact the ice. A new study by Dalaiden et al. suggests that this Amundsen Low strengthening is caused by an anthropogenic forcing, and a coupling to the general temperature pattern and trends in the Pacific Ocean.

You don’t have to be a digital nomad to turn your next holiday into something long and life-enhancing. Far better, in fact, to ditch the gizmos as well as the dreary weather that makes them seem more vital than they really are, and take off for a place and a climate where you can pretend winter never arrived.
The tourist boards of both Greece and Spain are rolling out advertising campaigns to tempt us south. Greece is targeting the pensioner market, with billboards asking “Wanna feel 20 again?” that show a smiling older couple drinking wine and taking selfies on the deck of a yacht. Alicante and the Canary Islands are banking on “thermal tourism” to fill up out-of-season hotels with North Europeans fleeing soaring bills and plummeting temperatures.
Let’s face it, this is not the season of the weekend break to Berlin or Boulogne. Days are short. Rain and cold are the default weather. Airports and ferries are at their least welcoming and by the time you get to your destination, you’ll be thinking – as in, you’ll be dreading – the return leg.
To properly escape the grim gloom of Britain between now and about May, you’ll need to put serious distance between you and the UK, and sufficient time to soak up a contrasting climate and experiences that will reinvigorate the soul.

Trust me, I’ve tested the theory. I flew to Mexico on Christmas day and spent three weeks in the Yucatán Peninsula. One year I spent all of February on the Brazilian coast. I used a month in Andalucia to work on a guidebook. I missed turkey leftovers, sleety hill walks and my log burner not a jot.
You might think that fuel costs and rampant inflation will make a holiday anywhere unrealistic this winter. But some economies seem to have swerved the worst of the alleged global cost-of-living crisis. It’s beery-brained pub talk to say “It’d be cheaper to go abroad than to turn on the central heating”. But you can go to Cyprus for £12.75 per person per day, and lots of places come in at around £50-£60 per day – some throwing in breakfast or half-board along with flights and transfers.
The following is a selection of packages and countries suited to winter escapes. It’s by no means exhaustive. We could also have included the Cape Verde, Dominican Republic, Gambia, Malta, Senegal and the more southerly of Spain’s Costas and Portugal’s Algarve. Not all destinations deliver the same degree of heat or minutes of sunshine in mid-January, but they are sure to be cosier than even the most temperate corners of the UK.
1. Morocco: Relax in a luxury riad – from £50 a day
On the edge of the Sahara, Morocco has blue skies for much of winter and Marrakech is arguably at its loveliest when the heat is not searing but soothing. Tangier is also pleasant, and cooler afternoons make walks around the main sights and the old medina more enjoyable than ever. The package day-trippers from Spain fall off, too, meaning you get a real sense of the city, its café culture and local life. The Atlas Mountains do get chilly, and January campers will welcome an open fire once dusk falls.
It’s easy to move around Morocco and you can pick up lodgings at very reasonable prices. As a base, the port city and resort of Essaouira is a good choice; it has art galleries, palm-fringed boulevards and some of the country’s finest hotels – and its famous sea breeze drops off in winter.

Madeira averages 20C into December and has been dubbed the “island of eternal spring” as well as the Pearl of the Atlantic. Familiar to all for its cake and wine, it’s much-loved by regular visitors for its dramatic volcanic geology and black sand beaches, and the impressive levada irrigation channels that provide a quirky hiking network, while keeping the vines growing and the flowers in the botanical gardens flourishing.
Five minutes from the centre of Funchal, the Regency Cliff affords its guests privileged panoramic views over the Atlantic and the capital. Guests can make use of the Oceanus Health Club, which has an indoor Turkish bath, heated indoor pool, fitness suite and massage room.

5. Cyprus: The Med’s most reliable warmth – from £13 a day
Glance at a newspaper weather forecast table and there is almost always one salient sunspot: Cyprus. When it’s mid-20s in Spain or Greece, this small island between Israel and Turkey is often in the 30s. In peak summer, it can be ten degrees more. That can be a bit much, but it’s a great option for a winter top-up of UV and Vitamin D.
A large resort might not sound enticing, but Cyprus doesn’t draw massive crowds in the off-season, and a fair-sized town will supply the tavernas, bars, groceries and other services winter visitors need. It’s easy to set off on walks or drives to see vineyards, villages, monasteries, empty peninsulas and forested slopes, and uncover the Levantine, Venetian and Islamic cultures that have left their mark on the island.

6. Brazil: Nordeste is best – from £40 a day
Rio might be rich and famous, but Brazil’s nordeste (northeast) has better weather, bigger beaches, warmer seas and cheaper accommodation; within Brazil the region enjoys iconic status and is a favourite winter escape for people from São Paulo. As their winter is our summer, you won’t bump into more Brazilians if you go for a break after Christmas.
Salvador (aka Bahia), once the capital of Brazil, has a special energy due to its street life, a heady mix of syncretic religious rites, martial arts dancing, parades and processions. The Afro-Brazilian cuisine is superb; acarajé (deep-fried bean fritters with fillings), served on the pavements, is legendary.

Barra, close to the oldest fort, has its own beach and the centre – Pelourinho – is just a 20-minute bus ride. Long-distance buses run up and down the coast and a few hours inland are the caves, waterfalls and lagoons of the Chapada Diamantina National Park.

The price is for a solo traveller; a couple sharing can expect better deals. Return flights from London Gatwick to Salvador with Air Europe (with a stopover in Madrid) are £900 in late January, booked via opodo. co.uk. Avoid February 17-23 2023, if you’re on a budget, as Salvador’s famous carnival pushes rates up.
7. Mexico: Top up your Yucatán – from £81 a day
The Yucatán peninsula merits a long stay to check out all those beaches – from Cancún down to Punta Allen there are dozens – as well as the Mayan sites, some of which can be reached on excursions from the coast, while others require an overnight stay. There’s also lovely Mérida, the old urban centre of the northern region, and the sisal-making haciendas and cenotes (sink holes) that dot the lowlands.

A practical option if you want to dine out and combine seaside trips with outings is to get a hotel room in downtown Cancún. Playa Tortugas and the lively Hotel Zone are a couple of miles away, the northern beach resorts a little bit further, and the port for ferries to the more chilled Isla Mujeres around 20 minutes’ walk away.

8. Egypt: Fall for the Sharm offensive – from £81 a day
Fancy a fly and flop winter escape? Sharm El Sheikh is on Egypt’s Red Sea Coast at the tip of the country’s Sinai Peninsula. It has a hot desert climate and while things cool down in winter, December temperatures typically hover around 23C.
Purpose built for mass-market tourism, Sharm is functional rather than fascinating. The resort does, though, boast some of the world’s most impressive underwater scenery. If awesome diving, lavish dining, extended dozing and taking the occasional dip in the pool are what you need to recharge, then you’ll be well looked-after.
The four-star, family-friendly Renaissance Sharm El Sheikh Golden View Beach Resort has three restaurants, three pools, a spa, private beach and gym.

9. India: Stop in Goa – from £79 a day
The former Portuguese enclave of Goa, on India’s southwest coast, once drew British colonials seeking R&R, or B&B&B: bars, brothels and bad behaviour. It also had a spell as a hippie redoubt, and yoga and spiritual revival are still offered at hotels. Parts of the resort have been rebranded for well-heeled travellers, but the main attractions remain unchanged: a balmy climate, miles of golden, palm-fringed beaches, and delicious fusion cuisine.

10. USA: Drive the Southern States – from £139 a day
What pushes up the price of a long holiday? Dining out. Accommodation, Getting around. Solve all these with a motorhome adventure to the warmer half of the US. The deserts can be very nippy at night, but during the day you’ll be blessed with deep blue skies and stunning scenery. Arizona is a fantastic state to explore by road, with the Grand Canyon as a star attraction and some of the most iconic cowboy film backdrops up near the Utah border. Sedona is known for its vortexes – natural landmarks that inject all who drop in with rejuvenating energy. Or you could just hit Route 66 and find a nice diner.

RV parks are often in great rural locations, with year-round mountain biking, hiking and trout fishing all bookable from the site. Prices for a month’s motorhome hire start in the low £1,000s for a 2-3 berth van without a loo. But even three times that amount, for a large RV with all mod-cons, is great value if you’re travelling as a foursome or family group.

prepare this red pepper dip
The steps to prepare this version of mojo picón can be summarized in one:
Combine all of the ingredients into a food processor and voilà!
In the video below, I also show you the consistency of the cream. Keep in mind that the ingredients can be added in the order that you prefer.
Peppers can be bought in a jar, but make sure to read the label so that they do not have any added ingredients. I prefer to roast them myself.
Actually, you just have to cut them and put them in the oven until they are tender. Keep in mind that the quantity of 150g is indicative and it doesn’t need to be perfect.
If you don’t like the skin, it’s easy to remove it once they are already roasted and cold. I usually buy organic peppers and I usually leave the skin because once processed, you won’t notice it.

Why we should eat red pepper dip
As explained above, I usually eat this pepper pâté as a healthy fat with vegetables, almonds providing that fat.
However, as the main ingredient of this recipe is red bell peppers, I prefer to tell you about all of the benefits that these vegetables have and that I discovered, thanks to James Wong‘s book How to Eat Better.
It seems that red bell peppers are the vegetable with the most antioxidant of the ten most consumed in the western diet, being even ahead of broccoli and spinach.
A serving of 80 g peppers (just over half of this recipe) has double the recommended daily amount of vitamin C, plus they have fiber, vitamin A, and carotenoids.
As often happens with other brightly colored vegetables, red bell peppers are, among their green, yellow and orange siblings, the ones that contain more polyphenols and carotenoids.
Polyphenols and carotenoids are phytonutrients, chemical substances that are not essential for the human body but are beneficial for the prevention of degenerative diseases and, in general, favor a good state of health.
Another interesting fact that I found in James Wong’s book, is from some studies on the best cooking method for bell peppers that indicates that the most beneficial is baked since there is no transmission of nutrients to the cooking broth.
In addition, since the size of the peppers will be reduced with this method, its nutrients will be concentrated.
Finally, another discovery of the science of nutrition is that the spongy, white tissue inside the peppers has a higher concentration of antioxidants and polyphenols than in the pulp.
I’ve started eating red bell peppers only a year ago but if I had known all of its properties before, that would have encouraged me to start earlier.
When is the best time to prepare this red bell pepper spread
As I always say, the ideal in our diet would be to consume seasonal products. In the case of peppers, we are lucky because their season, in Spain, goes from September/October to June, although in the fruit shops we find them throughout the year.
And if one day you can’t buy them fresh, there is always the option to buy them in a jar.
This pâté of peppers has become a staple in my fridge, so regardless of the season, it is one of the recipes that I alternate when I prepare my weekly meal prep. Another fridge staple recipe is this Capers Hummus.
How to store this pepper dip
As with all of my fridge staples, I store this mojo picón in an airtight glass container. It lasts for about a week in the fridge, if I do not finish it earlier, of course…
I have not tried to freeze it because I usually finish it pretty quickly, but since it contains the fat from the almonds it should still taste good after thawing. Please, would you let me know if you try to freeze it?
Mojo picón to go
As I said at the beginning of this post, this recipe is more like a spread than a sauce, so it’s very easy to take it wherever you want.
If, for example, you want to take it to work, to a picnic, or to eat with vegetables, you can use one of those recycled glass jars that you probably have at home, so that you can transport the amount you desire.
Remember to keep the already cut vegetables in a separate bag since a prolonged contact with the pâté would soften them.
You can do the same if you wish to bring some to eat with your homemade lunch. Insert a couple of tablespoons in a small jar and when you have heated the food you can add it on top.
Occasions to eat this red pepper dip
If you like toast, you can use this Canary mojo picón as spreadable and you could also add something on top, such as a piece of cheese, an anchovy, or some pickles.
I use it as a healthy fat in my balanced plate to eat together with my baked vegetables.
Finally, as I show you in the photos, it is ideal to eat it with raw vegetables as a healthy snack, as an aperitif before lunch or dinner or it can also be added to meal bowls like this Buddha Bowl.
I used cucumber here, but it goes with any vegetable. By the way, if you’re wondering where I got that super cute glass bowl, I bought it on Claudia & Julia’s online shop 😉
Vegan version
If you are vegan, or you cannot consume dairy products, it is very easy to adapt this recipe because you simply have to eliminate the cheese.
Also, since the recipe has a very small amount of cheese, you do not need to change the amounts of the other ingredients. It will be just as delicious!
Different flavors, other ingredients, and other proportions
In his book, James Wong proposes his version of mojo picón where the proportion of peppers and almonds is 4 to 1, or 400 g of peppers per 100 g of almonds.
My choice for this recipe is a 1.5 to 1 ratio, that is 150 g of peppers per 100 g of almonds because my goal is to consume this pâté of peppers as a healthy fat.
On another occasion, I added a spoonful of sesame seeds that does not change the flavor but continues to add more healthy fat.
Also, one time I’ve tried it with green peppers and the taste was more bitter, which makes sense since red peppers are much sweeter than the green ones.

Instructions
Core the chilli peppers and cut into rings. Peel the garlic and roughly cut the cloves. Dice the pepper.
Put the chillies, paprika, garlic cloves, salt, cumin, paprika powder, saffron and the white wine vinegar in a bowl and puree with the hand blender until a homogeneous mixture is obtained. Then pour in the olive oil while constantly pureing.

My husband has a trick in case unexpected guests arrive and
I didn’t have time to cook or didn’t really want to. Then he buys
mussels, wash and throw them into the pan, crumble there

MOHO turns out to be an elegant element on the table. Mojo is a Canarian sauce used to season many dishes
Canary Islands. Here are the main components from which it is prepared: vegetable
oil, vinegar, garlic and coarse salt, and here are additional ones:
sweet pepper, hot pepper, cumin, coriander. From additional
ingredients will depend on the taste and color of the mojo sauce.
It is believed that moho came from Portugal, in Portuguese molo –
it’s just sauce. It is also acknowledged that the recipe was influenced by
Latin American traditions. Cultural and trade exchange with
Portugal and Latin America, the Canarians have always had
rich. In any case, today moho is a calling
Canarian cuisine card.
Canarians are creative and special. literature or the Internet can be found
new recipes such as almond moho, cheese, green
pepper, with egg and avocado.
Here are the most famous recipes: MOHO PIKON (RED MOHO OR MOHO
SOLORAO). It’s hot red
sauce. Ingredients: 1 hot or red pepper (pepper). 1/2 tablespoon cumin. Breadcrumb Butter Vinegar 6 garlic cloves. Coarse salt to taste Water

Preparation:
coriander, a handful of coarse salt and a few cloves of garlic. All this
grind well. Then pepper is added to continue
crush.
When everything is well ground, olive oil is poured into the mortar,
white wine, a little vinegar and a little water. Everything is good
is mixed. This mojo can be made with parsley or
mixture of coriander and parsley.
And finally, the secret of the Canary potato. Canarians don’t usually bake
potatoes, but they cook it in their uniforms, with a lot of
salt. Not surprisingly, salt is mined in the Canary Islands. potatoes
choose small. The result is called Wrinkled Potato.

Lately I have become interested in Spanish cuisine. My husband is very fond of spicy dishes and burning sauces, and I was curious to taste Spain.
I started to get acquainted with Spanish cuisine with potatoes, which had to be boiled with a very large amount of salt (1 glass of salt per 1 kg of potatoes).
I thought it would be too salty, but no, everything turned out to be delicious. I generally keep quiet about the sauce – a burning charm, if in a nutshell. Read on for all the cooking details, and in the meantime I will cook a couple more dishes from Spanish cuisine, and I will share the best of them with you soon.
To prepare potatoes in Spanish you need the following products
250 g salt
water
To make Moho Picon Sauce, you need the following ingredients:
– 5 chili peppers
– 5 tablespoons wine vinegar
– 5 tablespoons vegetable oil
– 1 tbsp. ground paprika
– 1 tbsp. cumina
— 1 head of garlic
Wash a kilo of potatoes well.
Pour the potatoes in a saucepan with water.
Add 250 g of salt. We send the pot with potatoes to the fire and cook until tender.
In the meantime, prepare the moho picon sauce. To do this, cut into small pieces of chili. We clear the seeds.
We clean the garlic.
Add cumin and paprika to the mortar and grind all the ingredients into a homogeneous mass. Add wine vinegar and vegetable oil and mix.
Meanwhile, the potatoes are ready. After cooking, it is covered with a white, salty coating, which allows the potatoes not to spoil at room temperature for up to 2 weeks (according to the Spanish publication). Although, I personally wonder why keep boiled potatoes for 2 weeks, if you can cook a fresh portion. Unless it’s good to take such potatoes with you on a hike.
Serve boiled potatoes with Moho Picon sauce to the table immediately after cooking. Boiled potatoes are still warm, very tasty, and not too salty.
